Chocolate Chip Oatmeal Cookies
1 cup butter, softened
1 cup packed light brown sugar
½ cup sugar
2 eggs
2 tsp vanilla extract
1 ¼ cups flour
½ tsp baking soda
1 tsp sea salt
3 cups quick-cooking oats
2 cups chocolate chips
Preheat oven to 325ยบ.
In a large bowl, cream together the butter, brown sugar, and sugar until smooth. Beat in eggs one at a time, and then stir in vanilla. Combine the flour, baking soda, and salt in separate bowl; stir into creamed mixture until just blended. Mix in the quick oats and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
Bake for 12 – 15 minutes. Allow cookies to cool on baking sheet for five minutes before transferring to a wire rack to cool completely.

Homemade cookies - THE BEST! I made 5 dozen Chocolate Chip Oatmeal Cookies (with pecans of course)a week ago. They lasted 3 days! The joke around the Bevi Bistro is how we all love frozen cookies...except they are never in the freezer long enough TO freeze. HH is a lucky man!
ReplyDeleteYour version sounds delicious too. The only cookies that get frozen at the Diner are at Christmas - I just don't think we SHOULD eat the dozens of cookies in a week, not that we wouldn't!
